The Fold is the culmination of two generations of love for the culinary world, from the culinary expertise and experience of the father, Augustus to the artistic pastry creations of Travin & Jason, both of whom despite the young age, have an artistic eye that would take many years to develop. And not to forget the secret to this recipe, the person who keeps it all together, the momager Dilki.

Augi
Executive Chef of The Fold, has over 35 years of experience as a chef working in countries such as the Middle East, Paris, Netherlands and various parts of Asia. Augi was the ex. Director of Culinary (10 years) in Cinnamon Grand in Sri Lanka and ex. Chef de Cuisine (8 years) in Crown Casino Perth.
Travin
Current Head Pastry Chef at Franca Brasserie, completed his pastry apprenticeship with the Crown Casino in Perth. Travin has worked in Bistro Guillaume Perth, Bennelong as well as BLACK bar and grill at The Star. Travin was also a top 10 finalist in Savour Patissier of the Year 2018.



Dilki
Front of house manager at The Fold, wife to Augi and mother to Travin and Jason. Ex. front of house manager at family owned restaurant Spice Shack (6 years) in Perth.
Saaya
Current Pastry Chef de Partie at three hat restaurant sixpenny. Saaya has previously worked in restaurants such as Quay, Sokyo as well as the main pastry kitchen in The Star.


Jason
Currently working alongside Travin as Pastry Chef de Partie at Franca Brasserie, Jason also started his pastry apprenticeship at the Crown Casino Perth, before moving to Sydney to complete his apprenticeship at The Star.
